Why Locals Love COV Edina

Situated in the heart of Edina, COV Edina offers an upscale American dining experience that beautifully marries coastal charm with sophisticated culinary flair. This restaurant and bar is a standout destination for those craving expertly crafted dishes that emphasize fresh, bold flavors and impeccable presentation.

The menu at COV Edina is a celebration of refined comfort food, with an inviting range of pasta, wood-fired steaks, and smoked meats that promise to delight every palate. Their Dungeness Crab & Shrimp Pasta is an exquisite choice, featuring a harmonious blend of Calabrian pepper, fresh tomato, basil, and a subtle crab essence that lifts each bite to a luxurious level. Equally tempting is the Bolognese Bucatini Pasta, boasting wagyu beef, creamy burrata, and a drizzle of Calabrian oil, perfectly paired with grilled sourdough – a rich, deeply satisfying dish that lingers in memory.

For those who prefer heartier fare, the wood-fired steaks and smoked meats selection, available at dinner, is simply superb. The 16 oz. Ribeye arrives juicy and flavorful, complemented by a loaded baked potato and garlic butter, while the Sakura Wagyu Brisket delivers tender, smoky goodness balanced by tangy slaw and house-made BBQ sauces. The attention to detail in sides, like truffle arancini served with the Petit Filet and rosemary parmesan truffle chips with the New York Strip, adds layers of indulgence that elevate the entire meal.

COV Edina excels in creating a dining atmosphere that’s both elegant and inviting. Guests have praised its quiet, intimate patio—perfect for savoring food under Minnesota's fleeting warm skies—even if the happy hour specials don't extend outdoors. Inside, the ambiance strikes a perfect balance between lively and relaxed, with tasteful music setting a sophisticated yet comfortable tone that fosters easy conversation.

Dessert lovers will find the sweet plates irresistible. The locally made Sammi Cake, a decadent three-layer chocolate cake with buttercream icing and rich chocolate sauce, is a chocolate lover's dream. Alternatively, the S’mores Brownie delivers a playful twist with white chocolate chip fudge, salted caramel, and burnt meringue, creating a delightful contrast of textures and flavors.

Customers consistently rave about the attentive, friendly service and the flawless execution of each dish. Whether it's the "chef’s kiss perfect" atmosphere and food noted by Melissa Owens or Marlon Blake's enthusiasm for the signature cocktails and fresh truffle fries, the praise is unanimous. COV Edina has earned a reputation for being more than just a meal—it’s a vibrant culinary experience that invites guests to savor every moment.

If you find yourself in Edina, whether stopping by for a leisurely lunch or a memorable dinner, COV Edina promises an elevated American dining experience that is rich in flavor, warmth, and style. Don’t miss the chance to indulge in their thoughtfully crafted menu and soak in the understated charm of this exceptional restaurant and bar.

This place has a lovely, quiet patio area although you can't order Happy Hour there. That's fine, we have such a short patio season in MN that it's imperative to take patio seating whenever possible lol The atmosphere was good, they had music playing in the background but not too loud to interfere with conversations. We just ordered some appetizers this time-- and they were enough. Both flavors of chicken wings-- the Hot and Mango Habanero were delicious. Neither were too hot, but probably Minnesota hot haha I enjoyed the char on the wings which add another layer of flavor. We also ordered the lobster guacamole. It was a large portion that we didn't even finish the whole thing! In the end, just appetizers and drinks cost over $120 . We came at around 730 which was surpringly not busy on a Saturday. There were plenty of patio and indoor space available. Our server was not easy to get ahold of during this time, he disappeared in and out of the restaurant a lot. We saw the runner more often but couldn't order extra cocktails or wings when we wanted. As such, we will probably try the other restaurants in the area before we come back to this location.

What an amazing place. We stopped by her randomly with no reservation on a Sunday evening. The experience was amazing. The food was delicious, the service was great and the cocktails was delicious. I would highly recommend this restaurant. The truffle fries were hot and fresh. The chocolate cake dessert was some of the best dessert I have had in the cities. Would go back everyday if possible.

Gorgeous atmosphere and food. It was our first visit and I am so glad we went. Can't wait to go back. Upscale, cozy coastal. Everything was just chef's kiss perfect.

Incredible food and service was what we got here. The signature cocktails were absolutely beautiful. The service was impeccable and I can't wait to come back and dine again. The Wedge Salad was amazing. I highly recommend stopping for lunch or dinner. The location is beautiful with plenty to see at the Galleria! Thank you!

Stopped by for a late lunch on Saturday during the Galleria flower show, they were quite busy and we had a half hour wait to be seated. We tried the Lobster Tartine (lots of food, not much lobster), Crispy Chicken Sandwich with fries (as expected but was too messy to pick up to eat, coleslaw on it?), the COV Roll (very good), the Dragon Roll, and I had the Brisket Sandwich with fries (why is this on toast and not a nice bun? I didn't enjoy that part). Overall, the food was good and the service was great - although kinda spendy at $24-30 for each of our entrees. Desserts are extremely expensive so we skipped that ($17 for key lime pie, I believe it was $12 for ice cream?).

This restaurant is used for work holiday parties and it was our 2nd year back. We had a bigger group and they were able to accommodate with the room. Food was amazing, service was top tier and the atmosphere was great! The fireplace in the room made it nice and cozy. Only downside is it can get really loud in there with everyone talking so its hard to mingle with people from across the table sometimes.

We came in around 6:40 p.m. to celebrate my mom's birthday. Before we walked in the first thing that we saw was a person that was supposed to greet was scrolling through his phone. He looked up for about 3 seconds to just say "Hi, welcome in" and immediately after that went back to his phone. I ordered baby back ribs and in my opinion for the price that you pay the ribs were really dry. Probably the worst coleslaw that I ever had. It was way too sweet and just tasted like an apple. My wife got French dip and that was very delicious. Our server was barely checking on us after we got our food so we had to ask a completely different server to get us refills on our drinks. We were at the Wayzata location before and the experience there was wonderful which I can't say the same about this one.
